Ingredients

  • For the Curry
  • 1 pound chicken thighs or beef, cut into bite-sized pieces

  • Two tablespoons of vegetable oil

  • Two large onions, finely chopped

  • Three cloves garlic, minced

  • One tablespoon of ginger, minced

  • Two large carrots, peeled and chopped

  • Two large potatoes, peeled and chopped

  • 4 cups chicken or beef broth

  • One apple, grated

  • Two tablespoons of curry powder

  • One tablespoon of turmeric powder

  • Two tablespoons of soy sauce

  • Two tablespoons Worcestershire sauce

  • Salt and pepper to taste

  • Two tablespoons flour

  • Two tablespoons butter

  • For Serving
  • Steamed white rice

  • Fresh cilantro, chopped (optional)

Instructions

  • Preparation:

      • Prepare all the vegetables and meat by cutting them into bite-sized pieces.
      • Grate the apple and set it aside.
  • Sautéing the Ingredients:

      • Take a big pot and heat the vegetable oil medium to high.
      • Add the chopped onions and sauté until they become translucent, about 5 to 6 minutes.
      • Add the minced garlic and ginger. Continue cooking for another 2 minutes until fragrant.
  • Cooking the Meat:

      • Add the chicken thighs or beef to the pot. Keep cooking until browned on all sides.
      • Season with salt and pepper to taste.
  • Adding Vegetables and Broth:

      • Stir in the chopped carrots and potatoes, cooking for about 5 minutes.
      • Pour in the chicken or beef broth, bringing the mixture to a boil.
      • Slow down the heat to low and cover the pot. Let it simmer for about 20 minutes. Or wait until the vegetables are tender.
  • Creating the Curry Base:

      •  Combine the curry powder and turmeric powder in a small pot.
      • Add the grated apple, soy sauce, and Worcestershire sauce to the pot, stirring well.
  • Thickening the Curry:

      • Put a few blocks of butter in a separate pan and melt it over medium heat.
      • Add the flour and keep whisking to form a roux. To make it look golden, cook for about 2 minutes.
      • Gradually add the roux to the curry pot, stirring to thicken the sauce.
  • Final Simmer:

      • Let the curry simmer for another 10-15 minutes, allowing the flavours to meld together.
